I could give you the science behind it, but I won't bother. The bottom line is that older eggs, once boiled, peel easier. There you have it. The effort of finding the eggs takes effort enough. Who wants to wrestle with the shell when it comes time for peeling?
As far as the best “hard cooked” cooking method, several egg experts I checked with suggested the following: cover a single layer of eggs with COLD water, bring to a boil, then cover, remove from heat, and let sit for 15-17 minutes depending on how you like the yolk cooked. Once the eggs are finished cooking, pour out the hot water and soak the eggs in cold water.
