CHOCOLATE CHIP STRAWBERRY MUFFINS
Makes 12

Nonstick cooking spray
1-3/4 cups all-purpose flour
1/2 cup plus 1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup mini semisweet chocolate chips
3/4 cup milk (do not use skim)
3 tablespoons butter, melted
1 egg, lightly beaten
Strawberry preserves

Preheat oven to 400 degrees. Spray a 12-cup muffin pan with cooking spray.
Combine flour, 1/2 cup sugar, baking powder, salt and chocolate chips in a medium bowl. Make a deep well in the center of the flour mixture.
Whisk milk, butter and egg in another bowl. Add to flour mixture. Stir just until combined. Do not overmix.
Spoon all but 1 tablespoon batter into each muffin cup. Spoon a heaping teaspoon of strawberry preserves into the center of each muffin. Top with remaining batter. Sprinkle tops with remaining sugar.
Bake 20 to 22 minutes or until muffins spring back when lightly touched in the center. Remove muffins from pans and cool.
